I have stumbled across this amazing product called Lupin flakes that is a great source of protein 40% and fiber 37% while being low in carbohydrate! It is a very versatile ingredient and can be used in a range of recipes from baking sweets through to making dips and sauces. I have been thinking of the possible recipes I could use it for and seeing as I haven’t ever made any protein bars before I thought I would make some low carb protein bars :). They are fairly simple to make as they don’t require any baking and just need to be thrown together and left to set in the fridge
1/2 cup Lupin Flakes
1/4 cup Vanilla whey protein powder
1/2 cup almond milk
1/8 cup coconut flour
1/8 cup cocoa
50g dark chocolate
1. Mix the lupin flakes, whey protein, almond milk, coconut flour and cocoa together in a blender or by hand.
2. Once the mixture is a soft dough consistency mould the mixture into bar shapes or balls if you want truffles.
3. Melt the dark chocolate and cover the bars in the chocolate and then pop them in the fridge/ freezer to set. I would recommend putting the chocolate covered bars on some grease proof paper as they set, to make it easier to separate them once cool.
